Tyrannosaurus Rex for me. Boring choice, but it is just so endlessly fascinating, and I love the way that it has not only lived up to the hype from the movies, but actually exceeded it.

The Jurassic Park T. rex for instance is so f*cking lame compared to the real animal.

I honestly love all dinosaurs, there so intreasting in many ways. Yet if I had to select just one... Carcharodontosaurus, the Shark Toothed Lizard

Part of the reason is that I have a fossil tooth of one, another is that it was the first dinosaur I really bothered to do research on.
