I like Natalie Portman in Attack of the Clones, but Carrie wins for me. She doesn't really look like a Hollywood actress really. She's more the girl next door type which makes her all the more attractive to me. I think she looks the prettiest in Empire and obviously the hottest in ROTJ. Carrie Fisher is in my top three when it comes to beautiful actresses.
