I lean slightly towards Vengeance these days though I insist Die Hard 2 is a lot better than people say it is. I just think the third movie is the ultimate summer action movie which never lets up. It also connects better with the first by having the director of that movie return for this one as well as having Gruber's brother in it. I do think the ending is slightly tacked on (due to the constant rewrites), but apart from that it's an excellent action movie and the last great Die Hard movie for me.

Probably the third one. More of a direct sequel, though I will say that I don't think you could have jumped from 1 to 3 right away. Ironically 3 might have seemed a bit unoriginal if it had a similar bad guy right away. 2 is a great bridge between them.

I always thought it made for a great trilogy. 2 has always been a favourite sequel of mine mainly because it acknowledges the absurdity of the same guy being in the exact same situation as he was in the previous film and has fun with it With Die Hard 4.0 McClean went from an average joe in the wrong place at the wrong time to becoming some sort of superhero.

I think that the trilogy really got everything that you could get out of it to be honest.
Like you said the whole point is that it's about a fairly average guy getting caught up in an unbelievable situation. You can get away with that happening once more like Die Hard 2, then you can use a third one to wrap up any loose ends, like a villain or the villains loved one wanting revenge.
However after that where is there left to go? You can't have another incredible situation he just happens to be caught up in, so you have to turn him into an action hero which ruins the point of it.
